In 2014, the brand le Potica was created, which has become synonymous with boutique-made potica and has enriched the experience of Slovenian traditional cuisine with its innovative approaches. On the 10th anniversary of the brand, its founder, Janja Štrumbelj, published the book Potica without stress, in which she breaks down many stereotypes about the proverbially difficult preparation of potica with her tips and tricks
From the introduction:
»I’ve been baking poticas professionally for 10 years now, and I have concluded based on experience that it’s actually best to keep the preparation of potica as simple as possible. Of course, it’s good to follow the basic recommendations, but many myths about the complexity of preparing it unjustly discourage us from baking.
The more I bake, the more I enjoy it and the more it inspires me. Traditional recipes are a great foundation to build on, using different, perhaps unusual ingredients for potica to create wonderful new symphonies of flavours. It’s just a case of letting your imagination run free and trying out your own, innovative combinations.
With this book, my aim is pass on my enthusiasm for potica, to share my experiences with you, and to bust some myths. Above all, I’d like to bring the art of baking potica closer to those who are just getting to know about it and are in fear of it.
